Baking gluten free recipes can be tricky. Good results begin with good flour.
This recipe is a BIG Batch that is inspired by the packages of Bob's Red Mill Gluten Free Flours that can be purchased at most grocery stores.
*Keep in mind - Gluten Free flour mixes can be higher in sodium than wheat flour. You may want to start with 1/2 - 3/4 -the recommended amount of salt in a recipe and adjust to taste.
*The recipe below is for use in cookies, muffins, pancakes, and cakes/cupcakes. Not for use in breads or pizza dough.
Gluten Free All Purpose Flour Blend
(Large Batch)
makes 11 cups
4 cups Teff Flour
4 cups Millet Flour
1.5 cup Tapioca Starch
1.5 cup Potato Starch
2 + 3/4 tsp xanthan gum (optional for better texture/binding)
